  淮杨菜可是中国四大菜系之一。

  韩佳:那你说说,这中国的四大菜系是哪四大啊?

  Chinese cuisines are?

  大牛:听好了,它们是川菜、粤菜、鲁菜,

  Guangdong, Shandong,

  还有我们今天要去品尝的淮扬菜。

  韩佳:火候不光是指火的大小,

  大牛:火候,火读三声,候读轻声,

  "Huo hou," third tone, neutral tone,

  means the duration and degree

  of heating. "Huo hou."

  韩佳:没错,这火不能大也不能小,

  The heat has to be just right

  时间不能长也不能短,

  and so does the timing.

  要刚刚好。

  That's great.

  今天王师傅为我们做了一道拿手菜,

  The next dish we're preparing

  When did you learn to do the cooking?

  大牛:在英国的中餐馆里,我们就有扬州炒饭。

  We have Yangzhou fried rice in

  Chinese restaurants back in the U.K.

  扬州炒饭又叫碎金饭。

  Yangzhou fried rice is also called

  golden rice.

  因为每一粒米都包裹着蛋黄,

  Because each grain of rice is

  wrapped in egg,

  所以也叫金裹银。

  it's also called silver wrapped in gold.

  韩佳:不错不错。大牛这方面的知识还真不少。

  Not bad at all. Daniel has great knowledge

  in this area.

  大牛:这就是我今天的得意之作,扬州炒饭。

  This is my proud work of the day,

  Yangzhou fried rice.
